Comment on Curry roux Japanese homemade by Healthy cooking https://www.chopstickchronicles.com/japanese-curry-roux/#comment-73417 Sat, 07 Oct 2023 01:11:34 +0000 https://www.chopstickchronicles.com//?p=11038#comment-73417 Loved the recipe but placing the warm roux in a cling wrap ( Made of petroleum ) is such a terrible idea.I placed it in a glass container and covered after I scored it and it came out fine without adding carcinogenic ingredients . Let’s get healthier a bit instead of wondering why many people even at younger age are getting cancer. It’s not that hard people!

However KitchenAid warns against using a speed higher than 2 when kneading. In addition they warn against running the mixer for than 6 minutes. How do you get around these limitations?

Hi DnƬƫl, Thank you for clarifying, after you turn the oven down to 140, bake 55 minutes. My oven took 20 minutes down to 140, and then 35 more at 140, all together 55 minutes. So 20 minutes of cooling to 140 and then 35 more at 140, but 20 minutes is depends on each oven.

Just to clarify: should the cake bake 55 more minutes AFTER it’s cooled to 140? Or 20 minutes of cooling to 140 and then 35 more at 140?

Thanks for clarifying! But in that case, if I use a total of 500g flour, it’s 100 g for the yudane and 400g for the rest of the dough. Basically doubling everything, if my math is correct. šŸ™‚
